Oh the holiday season! The rush to the new year can be a blur of presents and pressures and celebrations and caloric overloads. And then we land on the doorstep of a new year, exhausted, and looking squarely into the fresh face of all the potential a new year brings. And we make our resolutions, and hope we can keep them. In so many parts of the country, gyms reports an uptick of hopeful participants in the early weeks of a new year.

Sugar is so prevalent at the holidays, it's even in the name of the most ordiany Christmas cookie. And maybe you resolve every year to eat less sugar. Well, then you'll appreciate one of the main ways to improve your baking at high altitude — reduce the amount of sugar. The other key tricks are to increase moisture and oven temperature, and to decrease leavening.
